Easy Apple Turnover

  • 4 apples
  • 2 T butter (omit for a lighter version)
  • 2 tsp citrus peel
  • ¼ C sugar or ⅛ C raw honey
  • 1 tsp pure vanilla extract
  • 1 T cornstarch
  • ½-1 tsp cinnamon to taste
  • ½ pack phyllo sheets
  • About ½ stick butter, melted
  • Powdered sugar to dust

  1. Preheat oven to 375 degrees F. Peel and dice apples.
  2. Add apples, sugar (or honey), vanilla, citrus peel, cinnamon, and cornstarch to medium sauce pan over medium-low heat, stirring occasionally.
  3. Cook until mixture thickens, about 5 minutes.
  4. When mixture is no longer runny, remove from heat to cool.
  5. Have a damp towel ready to work with phyllo dough, as it tends to dry out quickly.
  6. Remove phyllo dough and cover with damp towel.
  7. Melt butter; using a pastry brush one sheet of phyllo.
  8. Fold dough in half vertically and brush again; fold again vertically so you have a strip and brush again with butter.
  9. On one edge, add 1.5 T apple filling.
  10. Fold one corner with apple filling down to make a triangle; keep rolling to make a complete triangle.
  11. Brush the outside of the triangle with extra melted butter and place turnovers on a cookie sheet.
  12. Cook at 375 degrees for 15 minutes or until toasted to a nice golden brown.
